Raw Choc Fudge Brownie

One of our team loves chocolate/sugar, well all of us love chocolate but he can eat a whole mars bar and then some.

Even as a teenager that was too much for me, raw treats are my idea of heaven.

So with different taste buds in mind, what better place to test my choc fudge brownies than in the work place?!

It was the perfect week for treats, the packing shed crew had avoided all mix ups the week before (they work pretty hard, under some pressure so that’s pretty impressive) so I decided a treat was in order by way of gratitude.

We send a cuppa up from the shop for the five of them late morning, so I took a piece of choc fudge brownie for each along with it…. outstanding success.

Then there was Arabella who works the shop and the coffee machine with me who, in her own indomitable style, kept cutting bits off of her piece to feed to customers for the sheer joy of seeing their faces.

Pete is the sweet fiend (if there are others they haven’t confessed yet) and I gave him a piece to take up to Graham, the wonderous ships captain, whilst I cut his and Toms pieces, they’re our glorious delivery men (all up we have the best staff & I’m not even biased… much).

Meanwhile up in the office, Graham told Pete to eat his piece so he could watch his face, Pete came back down with the funniest reaction of all. He felt more than a bit thrown to find that something so healthy could taste just so good, betrayed even! He offered to take another piece up to Graham but I could tell by the glint in his eye that it would never make it.

I also tested it on a fellow lover of raw treats and owner of the newly established yarn shop in Castlemaine & online, Zigo Zago (you can pay me later Alex). Her reaction was to visibly melt into the couch on which she sat. She had already tasted the topping on Tuesdays pancakes so she took the recipe home and made the topping for the school meeting where she served it with strawberries for dipping.

All in all, this is a well tested recipe.

Choc Fudge Brownies

Base:

1 cup pecans

1cup (150g) medjool dates (pitted)

1/4 cup raw cacao powder

2tblsp. Coconut oil (unscented)

Blend 1st three ingredients in a food processor till thick moist breadcrumbs (you don’t want the nuts too fine). Add melted coconut oil & blend well in.

Press into a tray, 20x20cm lined with baking paper.

Choc Glaze:

1 avocado (not too big, the ones we’ve had in the shop lately are perfect)

40ml agave

2tblsp raw cacao powder

2tsp. Vanilla

1/4 tsp cinnamon

Pinch of salt (Celtic sea salt is my fav.)

Blend well on high till thoroughly mixed If the avocado is large you may have to up the other ingredients, it’s there for texture not taste & believe me, no one yet has guessed it.

Cover base evenly & set in freezer or fridge (quicker in the freezer & best stored there too… Not that it will last long!
