Cauliflower Stir-Fry

Cauliflower Stir-Fry

1 tablespoon vegetable oil
1 medium head cauliflower, cut into small florets (about 6 cups)
1 small white onion, sliced into 1/4-inch wedges
2 tablespoons reduced-sodium soy sauce
2 teaspoons toasted sesame oil
½ teaspoon chile-garlic sauce, plus more to taste
170g fresh snow peas, trimmed (about 1 1/2 cups)
¼ cup diagonally sliced spring onions
¼ cup loosely packed fresh coriander leaves
½ teaspoon toasted sesame seeds

Heat vegetable oil in a wok or large skillet over high heat. Add cauliflower and onion; cook, stirring constantly, until almost tender, about 5 minutes. Add soy sauce, sesame oil and chile-garlic sauce; cook, stirring constantly, for 1 minute.

Add snow peas and spring onion; cook, stirring constantly, until the vegetables are tender-crisp, about 2 minutes. Remove from heat. Stir in coriander and, if desired, additional chile-garlic sauce until just combined. Sprinkle with sesame seeds.
