Fresh Broccolini Salad Without Mayo
600g broccolini about 3 bunches
¼ shallot finely chopped
⅓ cup sunflower seeds
⅓ cup pecans chopped
⅓ cup almonds slivered or sliced
½ cup dried cranberries
Honey Yoghurt Vinaigrette
¾ cup plain greek yoghurt full-fat, low-fat, or fat-free
4 T Apple Cider Vinegar
3 T Honey
In a 2-cup liquid measuring cup or bowl, whisk together yoghurt, honey and apple cider vinegar.
Taste, and adjust sweetness to your liking. This vinaigrette is bold and tangy, but feel free to add an additional tablespoon of honey if you feel it is too tangy for your liking.
Chill until ready to use
Trim broccolini and finely chop the shallot
In a large mixing bowl, add broccolini, shallot, almonds, pecans, sunflower seeds, and dried cranberries. Keep chilled until ready to serve.
An hour before serving broccolini salad toss the salad with the honey yoghurt
