Smashed Kohlrabi and Cauliflower

We know kohlrabi isn’t the most…presentable vegetable. But when combined with cauliflower and spicy horseradish, this side dish is definitely worth a try.

2-3 kohlrabi, peeled and cut into wedges
1 head cauliflower, cut into florets
½ cup plain yoghourt
1 tablespoon horseradish
½ teaspoon garlic, finely minced
1 teaspoon sea salt
½ teaspoon pepper
¼ cup green onions or chives, finely minced, plus more for garnish

In a large pot, using a steamer basket, bring about 4 inches of water to a boil. Add the kohlrabi and cauliflower into the steam basket and steam until tender when poked with a fork, about 15-20 minutes.

Remove the steam basked and discard the water from the pot. Add the kohlrabi and cauliflower back into the same pot and smash them together using a potato masher. (If you prefer an even smoother texture, use an immersion blender or electric mixer).

Add in the yoghourt, horseradish, garlic, salt, pepper and ¼ cup of green onions. Stir until combined.

Serve with extra green onions on top.
