An easy frittata recipe slowly cooked to develop a tasty and rich flavor. 

Preheat the oven to 220°C/fan 200°C/gas 7. Put the cauliflower in a large pan with the 300ml wine, bay leaves, peppercorns and garlic halves. Pour over boiling water from the kettle to just cover the cauliflower – don’t worry if it floats 

Arrange cabbage wedges in a 9 x 13-inch baking dish (ideally, not overlapping too much). Tuck spring onions all around. Grate zest over top. Pour in broth and vinegar, drizzle all over with olive oil, and sprinkle with spices. Cover tightly with foil and bake for 1 hour.
