Cabbage, Potato And Spring Onion Subji
1 bowl chopped cabbage
2 Potatoes cut in dice
1 chopped tomato
1 chopped green chilli
1/4 cup green part of spring onion
Salt to taste
1/2 tsp turmeric powder
1 tsp chilli powder
1 tsp coriander powder
1 tbsp oil
1 tsp mustard, cumin and hing
Peel, wash dice the potato, chop the cabbage, tomato and chilli. Cut the spring onion and put aside.
In a nonstick pan add oil, mustard cumin and hing then add chili and tomato, add salt and saute till tomato gets soft.
Now add chopped cabbage and potato mix slowly and cover it and cook for 5 minutes. When the potato gets cooked, add chilli powder, turmeric powder, coriander powder and spring onion leaves.
Mix slowly and cook for one minute, then switch off the flame. Our subji is ready.
Transfer the subji in the bowl. Sprinkle some spring onion leaves and serve with chapati or rice.
