Cauliflower, Potato and Carrot Curry

1 Cauliflower, Cut Into Florets
2 Potatoes, Diced
2 Carrots, Diced
1 Onion, Finely Chopped
2 Tomatoes, Chopped
2 teaspoon Ginger Garlic Paste
1 teaspoon Cumin Seeds
2 Cloves
1 stick Cinnamon
1/2 teaspoon Turmeric Powder
1 teaspoon Red Chili Powder
1 teaspoon Coriander Powder
As required Salt To Taste
2 tablespoon Oil
Fresh Cilantro For Garnish

Heat oil in a pan and add cumin seeds, cloves, and cinnamon stick.

Add chopped onions and sauté until golden brown. Add ginger-garlic paste and cook for a minute.

Add chopped tomatoes, turmeric powder, red chili powder, coriander powder, and salt. Cook until the tomatoes are soft and oil starts to separate.

Add cauliflower florets, diced potatoes, and carrots. Mix well to coat the vegetables with the spice mixture.

Cover the pan and cook on low heat until the vegetables are tender.

Garnish with fresh cilantro and serve the Cauliflower, Potato, and Carrot Curry hot with rice or bread.
