1 Zucchini, sliced into rounds
2 Red Capsicums, cut into strips
2 Carrots, cut into batons
1 Sweet Potato, sliced into rounds
1/2 Cauliflower, cut into florets
1 head Baby Cos Lettuce, chopped
1 Lebanese Cucumber, sliced
2 stalks Celery, sliced
Olive oil
Fresh basil, parsley, and thyme
Salt and pepper

For the Grilled Vegetables:
Preheat grill or grill pan to medium-high heat .Brush zucchini, capsicum, carrots, sweet potato, and cauliflower with olive oil. Season with salt, pepper, and thyme.Grill vegetables for 3-4 minutes per side until tender and charred. Arrange on a serving platter
For the Fresh Salad:
Combine chopped cos lettuce, cucumber slices, and celery in a bowl. Drizzle with olive oil and lemon juice .Season with salt and pepper. Toss gently.
To Serve:
Arrange grilled vegetables on one side of the plate .Add fresh salad on the other side . Garnish with fresh basil and parsley . Serve warm or at room temperature.
