Tacos with roasted cauliflower red cabbage and lime dressing

1/2 cauliflower, chopped
3 tbsp olive oil
1 1/2 tsp ground cumin
1 tsp chilli powder
1 tsp curry powder
1 garlic clove, crushed
2 tomatoes in small wedges
2 spring onions rings
1/4 red cabbage, shredded
4 soft tortilla wraps
4 radishes, finely sliced
4 coriander sprigs, chopped

Dressing:
3 tbsp creme fraiche
1 tbsp mayonnaise
1 1/2 tbsp hot sauce or sriracha

Preheat oven to 200°C.

Place cauliflower on a baking sheet and top with oil, cumin, chilli powder, curry powder and garlic. Mix well.

Roast for 30 minutes or until the cauliflower is golden brown and tender.

Warm tortillas in the oven prior to serving.
Mix the cream, mayonnaise and hot sauce together for the dressing.

Add the vegetables to the warm tortillas and top with dressing and coriander.
