Cabbage and Spinach Potatoes Skillet

2 Potatoes
3 Egg
1 Cup Spinach
1 Cup Cabbage Chopped
Salt To taste
Black Pepper To taste
1 tablespoon cooking oil
 
Slice the potatoes and boil them until partially cooked.

Heat vegetable oil in a skillet and fry the potato slices until golden brown on both sides. In a bowl, mix eggs, chopped cabbage, and spinach.

Pour the egg mixture over the fried potatoes in the skillet. Cover and cook for 5-6 minutes until the eggs set. 

Plate the cabbage and spinach potatoes and serve. Garnish with herbs and serve with your choice of veggies or meat.
